What's a girl to do when she wakes up craving pancakes? Make pancakes, of course.
Now, normally I don't crave pancakes, but when I do.... I crave pancakes. And this morning I was caught between a rock and a hard place when I had 30 minutes to get to class and an insatiable need for flapjacks. So what did I do? Skipped class. Obviously. It's Wednesday and I'm treatin' myself. But then again I treat myself basically every day so what's new.
I mosied out of bed to the kitchen, opened the cabinet, and reached for the tried and true Krusteaz pancake mix and *gasp* there was none there. This chick was not pleased. I don't think there has ever been a time where I haven't had pancake mix in my pantry. That and Cheez-It's are pretty much always a given.
But because I skipped class I now have the entire day ahead of me (genius thinking on my part). So I spent my morning learning to make pancakes and boy, am I pleased. And full.
Now I'm going to spend the rest of my day in my pajamas, watching House of Cards, and contemplating applying for a job. But the real world is terrifying so I'll probably just stick with Netflix (they're incredibly supportive of me wanting to procrastinate).
My advice to you? Life is short! Skip class! Make pancakes!
INGREDIENTS
- 1 1/2 cups flour
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1 Tbsp. sugar
- 3 Tbsp. melted butter
- 1 extra large egg
- 1 1/3 cups milk
DIRECTIONS
- In a large bowl, combine the flour, baking powder, salt, and sugar
- In a seperate bowl, mix the butter, egg, and milk until combined
- Pour wet ingredients into the flour mix
- Whisk until smooth
- Preheat griddle/skillet over medium heat
- Lightly grease
- Pour about 1/4 cup batter per pancake onto skillet
- Let cook about 2 minutes a side, flipping once bubbles rise to the top and pop
Now cover with butter, syrup, and whatever toppings you want and get down to business! Happy Hump Day!
